In another large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, brown sugar, and Dr. Oetker Vanilla Sugar until light and fluffy. Beat in the eggs one at a time.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the rolled oats and chocolate chips using a spatula.
Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper. Bake in the preheated oven for 8 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
