Preheat the oven to 200°C. Prepare the crust by combining the Shirriff Pie Crust Mix with the melted butter and cold water in a large mixing bowl. Mix until it forms a dough. Press into the bottom and 1 inch up the sides of the springform pan. Prick the crust with a fork and bake for 8-10 minutes. Set aside to chill while preparing the filling.
In another mixing bowl, use an electric mixer to beat cream cheese with sugar and eggs until they are light and creamy.
Add the Dr. Oetker Key Lime Pie Filling & Dessert Mix and milk. Continue to mix until well blended.
Pour the key lime filling mixture into the prepared crust.
Bake in the preheated oven for 50-60 minutes, or until the cheesecake is set on the sides and just barely jiggles in the center when the pan is shaken.
Let the cheesecake cool completely on a wire rack before serving. Enjoy your delicious key lime cheesecake!
