In a separate bowl, whisk together the eggs, sugar and flour until well combined. Gradually add the cooled vanilla pudding to the egg mixture, whisking continuously to ensure a smooth and creamy custard.
Fill the puff pastry-lined muffin tins with the custard mixture, filling each about two-thirds full. Bake in the preheated oven for 13 minutes, or until the pastry is golden brown and the custard is set.
