Preheat your oven to 180°C and line a baking sheet with parchment paper. In a mixing bowl, cream together the softened butter, peanut butter, granulated sugar, brown sugar, Dr. Oetker Vanilla Sugar and the egg until smooth and fluffy.
In a separate bowl, whisk together the flour, Dr. Oetker Baking Powder, and salt. Gradually add the dry ingredients to the wet mixture, blending until a dough forms.
Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 5cm apart. Flatten each ball slightly with a fork, creating a criss-cross pattern.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely. Enjoy!
